3-minute chia pudding

Chia seeds are full of omega-3 heart healthy fats and fiber, which means they help with fullness and satiety. Chia pudding is a great way to reap the benefits of these tiny seeds and makes for a great breakfast or snack. It’s also naturally gluten and dairy free for those with allergies. My recipe includes a few extras for flavor but feel free to change this up depending on your liking.

Makes 1 serving

Ingredients

  • 2 tbsp. chia seeds

  • 6 oz. nut milk of choice

  • 1 scoop collagen powder (optional)

  • 1 lemon zested

  • 1 tsp. maple syrup

  • 1/2 tsp. vanilla

  • Optional toppings: fruit, nuts, nut butter, granola, cinnamon

Steps

  1. In a glass jar, stir the chia seeds, milk, collagen, lemon zest, maple syrup and vanilla together

  2. Seal jar and shake vigorously until well combined

  3. Refrigerate for at least 4 hours or overnight

  4. Stir once more before adding toppings of choice
