Easy avocado egg salad

In my house, Friday usually involves cleaning out the fridge and scraping together what’s left over from the week in preparation for social plans and some much needed dining out. I love a good date night!

This easy avocado salad is a perfect breakfast, lunch, or snack option because it requires very few ingredients. The combo of protein and healthy fat helps to stabilize blood sugar and increase feelings of fullness/satisfaction. It’s also super versatile and goes great with veggies, whole wheat bread, crackers, or wraps (I used Whole Foods’ brand almond flour tortillas).

Makes 1-2 servings

Ingredients

  • 3 hard boiled eggs

  • 1 small avocado

  • 1 tbsp. dried dill

  • 1/4 tsp. black pepper

  • Pinch of sea salt

  • Everything bagel seasoning (optional)

Steps

  1. Mash the eggs together with a fork in a bowl or glass container

  2. Add in the avocado and spices and continue to mix until well combined and smooth

  3. Serve with veggies, salad, seeded toast, tortillas, etc.

* If you want to pack this on the go, squeeze a lemon on top to prevent browning and store in an air-tight container.*
